Recipe: Cauliflower Fried Rice

I’ve been making this recipe on repeat because it’s SO GOOD. Riced cauliflower is a great rice substitute, but you definitely have to cook it the right way. Here’s my Thai, coconut-inspired cauliflower fried rice recipe:

Ingredients:

For the sauce:

  • ¼ cup coconut cream
  • 2 tsp lime juice
  • ½ tsp fresh grated ginger
  • ¼ tsp garlic powder
  • ¼ tsp sea salt
  • 1 tbsp coconut aminos

For the rice:

  • 1 red onion
  • 3 cloves garlic
  • Zucchini 
  • Celery
  • Broccoli
  • 3-4 cups riced cauliflower
  • Raw coconut oil for sautéing 

 

Instructions:

  1. Mix all the ingredients for the sauce together and set it aside.
  2. Chop up all the veggies.
  3. Sauté the onions and garlic in coconut oil at medium/medium-high heat until they become translucent and fragrant. Add the rest of the veggies to the pan, adding more coconut oil as needed.
  4. Once the veggies start to cook, add in the riced cauliflower and stir.
  5. Finally, mix in the sauce.
  6. Serve & enjoy!

 

This recipe is so good, so filling because of all the fiber, and it really satisfies you like fried rice would. I hope you enjoy it as much as I do :)
