I think it’s safe to say I am OBSESSED with kelp noodles. I talk about and share them on Instagram all the time. I’m honestly always surprised that more people aren’t using them, which is why I’m creating so much content around them, they’re literally a miracle food.

Here’s why I love kelp: it’s basically made from algae, but doesn’t at all taste like it. I’m all about healthy noodle alternatives, but not at the expense of my health when its processed weird ingredients. And the entire bag is only 18 calories (yup, 18 calories…that wasn’t a typo!) Not to mention, only 9 grams of carbs and zero fat. So basically, you can eat an entire bowl of noodles for almost nothing. For this reason I prefer to pair kelp with a heavier (but healthy) sauce so that the meal is nutrient-dense. The kelp noodles alone are so light that it wouldn’t be a proper meal without some more substance. So I would recommend adding a vegan pesto sauce, or cashew cream sauce, or something like walnuts to make it more substantial.

I used to have trouble making them but recently learned a little trick. Naturally kelp noodles feel a little crunchy, so I’m going to show you guys how to make them taste, look, and feel just like pasta!

All you need are three things: baking soda, 1 lemon, and a strainer:

Step 1:

Rinse. Put the noodles in a strainer and rinse them. Then, just kind of break them up a little bit. They’ll probably be a little stuck together because they’re crunchy right out of the bag!

Step 2:

Place noodles in a bowl and add 1 TBSP of baking soda & the juice of 1 lemon. A lot of recipes just say to do lemon, but for me personally that’s never worked. Maybe I was missing something (who knows!) But it seems like baking soda was THE missing step.

Step 3:

Rinse again! Rinse well, then place back into the bowl.

Step 4:

Add the sauce & mix it up! This is the fun part :) You really want to get your hands in there and just kind of mix it up.

As you can see, no cooking involved. So easy, and this bowl of noodles is alllll of the good stuff. Kelp is a GREAT source of iodine, iron, and calcium. Insanely easy to make, grain-free, gluten-free, the list goes on!
