For this month I was trying to find something very season-appropriate, cozy, healthy, and of course yummy. I found a winner with this recipe! This video will show you step by step how to make the yummiest, creamiest, vegan-friendly pumpkin soup! So perfect for the Holidays (I wish you could smell through the camera – the aroma is SO GOOD).
Here are the ingredients you’ll need:
- 1 Tbsp olive oil
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 2 cans 100% pumpkin puree (not pumpkin pie mix)
- 2 cups low sodium vegetable stock
- 1 can light coconut milk
- 1 Tbsp 100% organic maple syrup
- 2 tsp ground ginger
- 1/2 tsp cinnamon
- 1/4 tsp ground nutmeg
- 1 tsp sea salt
- Pinch of cayenne pepper (optional)
Besides this all you’ll need is a knife, a pot, and a blender! Enjoy!
