Recipe: Vegan Pumpkin Soup

Hi lovelies – wanted to share this new video with you! I’m really into youtube videos now. What took me so long??

For this month I was trying to find something very season-appropriate, cozy, healthy, and of course yummy. I found a winner with this recipe! This video will show you step by step how to make the yummiest, creamiest, vegan-friendly pumpkin soup! So perfect for the Holidays (I wish you could smell through the camera – the aroma is SO GOOD).

Here are the ingredients you’ll need:

  • 1 Tbsp olive oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 cans 100% pumpkin puree (not pumpkin pie mix)
  • 2 cups low sodium vegetable stock
  • 1 can light coconut milk
  • 1 Tbsp 100% organic maple syrup
  • 2 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp sea salt
  • Pinch of cayenne pepper (optional)

Besides this all you’ll need is a knife, a pot, and a blender! Enjoy!
