Recipe: The BEST Grain-Free and Sugar-Free Chocolate Granola (Vegan- Keto – Paleo)

This recipe is A-MAZING – so satisfying and chocolate-y.  It’s also ridiculously healthy and very low carb, so it’s an all-around real exciting recipe 😛 I added a few more notes below on why I chose these ingredients. But first, let’s get into the recipe:

Ingredients:

  • 1 cup hazelnuts
  • 1 cup pecans
  • 1 cup pumpkin seeds
  • 1 cup macadamia nuts
  • 2 cups unsweetened coconut flakes
  • 1 tbsp raw cacao
  • 1 egg white
  • 1/4 tsp monk fruit
  • 1 tsp pumpkin pie spice
  • ¼ cup + 1 tbsp unrefined coconut oil 

Instructions:

  1. Preheat oven to 325
  2. Crush hazelnuts, pecans and macadamia nuts with a mortar and pestle depending on how big you want pieces (i found that a food processor made them too small so i just crush myself)
  3. Add nuts, seeds, coconut, cacao, and pumpkin pie spice in a large bowl
  4. In separate bowl, beat one large egg white until it becomes foamy then add to bowl and stir well (this will help the cereal stick together in bigger clumps)
  5. Melt coconut oil so it’s liquid, then add monk fruit and stir. Add mixture to dry bowl and stir well 
  6. Spread granola mixture evenly on a pan (cook on two separate pans or one after another)
  7. Bake for 10 minutes, then stop to stir and bake another 5-10 (don’t overcook – the nuts can burn easily!)
  8. Let cool and add to glass jar or Tupperware 

 

You may have seen that I’ve shared a raw, similar version of this in the past that I would eat to get my cereal fix (I’m fully obsessed with cereal but refuse to put the overly processed, high-chemical sugary stuff in my body anymore!). But this version just took it up 10 notches! I purposely chose nuts and seeds that are lower carb and higher in fat, and omitted grains, so that everyone in the paleo and keto communities could feel included. But feel free to make it your own and choose whatever nuts and seeds you like! Also, the egg white isn’t necessary, but does help it chunk together a little bit if you want that sort of consistency. 

I would recommend keeping the cacao and coconut oil. Cacao is just so good for you and is loaded with antioxidants, and when it’s mixed with the coconut oil and Monk fruit it truly gives an incredible chocolate flavor. Monk fruit is definitely my favorite healthy sugar alternative. Enjoy!
