Recipe: Erica’s Crispy Ranch Sweet Potato Fries (Vegan, Paleo)

If you don’t really like sweet potatoes, you need to try this recipe and then re-evaluate. They are SO good, crispy, and actually healthy.   I don’t love sweet, sweet potatoes. I prefer savory, and that’s exactly what these are. Make sure to follow the recipe order, it makes a difference :) 

Ingredients: 

  1. 3 sweet potatoes 
  2. 2 TBSP Avocado Oil 
  3. 1-2 TBSP Arrowroot Starch
  4. Parsley (finely chopped fresh, or dried)
  5. Dill (finely chopped fresh, or dried)
  6. Onion Powder 
  7. Garlic Powder 
  8. Pepper
  9. Sea Salt 

Instructions:

  1. Preheat oven to 425 degrees fahrenheit 
  2. Slice potato into steak fry pieces, then place in a bowl of cold water and let soak for 30 minutes 
  3. After 30 minutes, strain and pat dry with a towel
  4. Add back to bowl and toss with avocado oil, arrowroot starch, and all spices EXCEPT salt (add even amounts of all spices to taste. Approximately 1 tsp of each)
  5. Spread evenly on parchment-lined baking dish
  6. Bake for 20 minutes, then flip each fry and bake another 20 minutes

*I like them just a little charred on the ends, but adjust baking time by a few minutes to your preference
